Guilt-Free Summer Treats

Summer is in full swing! Keep in top shape this year with these healthy but irresistible treats – perfect for all of the family and there’s something for everyone.

 

➺ Fruity Cream Pops

Makes: 6-8 popsimage of fruity cream pops

You’ll Need …

  • 400g Vanilla Greek Yogurt
  • 300g Strawberries
  • 2 Ripe Bananas
  • 1 Handful – Dark Chocolate Chips

 

This simple treat is so easy to make! Simply mix in a bowl the yogurt, fruit and chocolate chips. Pile into popsicle containers and pop into the freezer for 1-2 hours.

Remove 10 minutes before enjoying and there you have it, a delicious, iced treat that everyone is bound to love.


➺ 101 Cal Cheesecake Bites

Makes: 22 Bites

You’ll Need …

  • 340g Raw Cashew Nuts
  • 340g Pecan Nuts
  • 6 Pitted Dates
  • 95g Shredded Coconut
  • A Pinch of Salt
  • 340g Strawberries
  • 2 Tablespoons – Raw Maple Syrup
  • 1 Tablespoon – Coconut Oil
  • The Juice of Half a Lemon

 

Soak the cashews in a bowl of water over night.

Blitz together the pecans and dates and then press the slightly sticky mixture into a mould of your choice and place into the freezer.

After draining the cashews, blend them with the strawberries, coconut oil, maple syrup and lemon juice to a thick and creamy consistency.

Remove the mini ‘biscuit’ bases from the freezer and top with the fruity mixture.

Place back into the freezer for 1-2 hours, this allows the fruit mixture to solidify.

Remove 15 minutes before serving for the ultimate summer treat. These little cheesecake bites come in at just 101 calories per serving, so you can afford to have 1 … or 2.


➺ Guilt-Free Choc Chip Cookies

Makes: 12-15 Cookies

 You’ll Need …

  • 1 Large Egg
  • 340g Quick Oats
  • 255g Whole Wheat Flour
  • 170g Raw Honey
  • 1 ½ Tablespoon Baking Powder
  • 1 ½ Tablespoon Cinnamon
  • 100g Dark Chocolate Chips

 

After pre-heating the oven to 150° – mix all dry ingredients together in a bowl. In a separate bowl, gently melt coconut oil. Once slightly cooled, add the egg and honey and stir well.

Now incorporate all wet and dry ingredients together and mix along with the chocolate chips until it forms a ‘dough’.

Wrap the dough in film and freeze for 15 minutes. After the dough has firmed, roll into bite-sized balls and place onto a lined baking tray into the oven for 12-13 minutes or until golden brown.

If you can’t wait (like us) then these cookies are irresistible straight from the oven when warm and gooey! But they’re also the perfect midday snack and totally guilt-free!
